An autumn treat
Cosy times are here and we’re really enjoying all the comfort of food. For those who received our latest newsletter, you would have heard that it is the season of the apple cake. Specifically, Jen’s spiced apple cake that makes a regular appearance in the studio keeping all our stomaches happy! So we thought we’d also share it on our blog because who doesn’t love a good cake recipe.
Ingredients
140g softened butter
200g caster sugar
2 eggs
200g self raising flour
1/2 tsp ground cloves
1/2 tsp grated nutmeg
450g cooking apples
Heat oven to 180C/fan 160C/gas 4, then butter and line a deep, 20cm round cake tin.
Put the butter and sugar into a large bowl and beat together until pale and creamy.
Add the eggs, a little at a time, until light and fluffy.
Mix the flour with the cloves and nutmeg, then fold into the eggy mixture.
Spread half the mix over the bottom of the tin, then cover with the apple slices. Dot the rest of the mix over the apples, then bake for
1 hr 30 mins or until a skewer comes out clean. It will get quite dark on the top before it's done in the middle. Leave the cake in the tin to cool - it might sink a bit - then dust with icing sugar before serving.
